Cannot create new Variable in new skin/GUI

There is no option to add new Variable in the latest skin/GUI. As far as I can tell at least...
I've been going crazy trying to figure out where to add new variables (I'm a noob). Realizing after several days that the option can only be found by reverting to old version, was both a relief and extremely annoying at the same time... ;-)
