Could someone tell how the associations of zwave devices let them communicates even if the main controller (zipabox" is broken or is oflline?
I have 5 fibaro rollershutter installed can i control and configure them if the main controller is broken?

Google for z-wave association. There are a lot of stuff about that. And yes you can associate i.e. wall switches to that shutters.
