How can I use my Everspring ST814 sensor offline status or battery value in rule generator to send an alert email ?

I don't have this device but the device supports your requirement. Check manual page 6. Now it's only up to zipato to support this class and feature.
When supported you will have a sensor for the battery low indicator and you can easily create a rule like when battery low, action send email.

A few months ago, there was an "alert" sensor in the rule creator.
It was allowing to choose battery alert, but I am not sure it was working.
Anyway, that sensor was suppressed when rule creator was reorganized.
Maybe Zipato will give back the possibility to get that kind of alert with re-introducing that sensor.
