On my side, I use a "Z-Wave Secure Wall Thermostat with LCD display" device (known also as SRT321 or Horstmann HRT4-ZW THERMOSTAT) and I can select the desired temperature from the device. It can be considered as a secondary controller (input) of the climate widget.

I have just made a vitual thermostat for deshumidification (output endpoint=vmc and hygrometer are set), but, how can I control it ? I can only control temperatures in my schedule, no humidity percent....same for ventilation control.
